These truffles are loaded with good fats & fibre for your digestion, protein rich from the cashews & also contain the galactogue flaxseeds for your milk supply!
All round winner and the kids love them as well. PLUS they will satisfy you and keep you fuller for longer!
1 1/3 cup of flax almond meal
1 cup of cashews, ground
2 cups unsweetened desiccated coconut (+ 1/2 cup for coating)
1/3 cup extra virgin coconut oil
1/4 cup organic maple syrup
zest and juice of one lemon
1 tsp pure vanilla extract
a pinch of sea salt
Place the cashews in a food processor & blend until smooth.
Add all of the remaining ingredients & blend for 1-2 minutes, or until the mixture starts to mix together like a dough.
Form small balls with your hands & roll them in the remaining coconut.
Place in the fridge for at least half an hour to set.
