2 cups shredded and patted dry zucchini (from about 2 medium-sized zucchini)
1 1/4 cup plain panko/gluten free bread crumbs
1 cup shredded cheddar cheese
1 large egg
1/2 cup finely chopped green onion
Sea salt and pepper to taste
Add some veggie sticks and your fave dip, our kids like tzatziki!
Preheat your oven to 180C and line 2 baking trays with a silicone mat or baking paper.
In a bowl, stir together all ingredients and mix well.
One tablespoon at a time shape mixture into small balls, popping them onto the baking trays until you have used up all the mixture
Bake until browned and crisp, about 30 minutes, flipping halfway through.
** this can also be cooked in a fry pan with a little olive oil spray
