Summer fruit icy poles

3 ways with summer fruits

How good is the fruit at the moment?

So sweet and full of flavour. If you’re extra lucky, you might even have some of these beauties growing in the back yard.

We love the versatility of summer fruits so have prepared our top three ways to help your little one enjoy these fruits, and you might even be tempted to try some yourself.

The best thing about these recipes is that once you have made the puree, you can use it as the base of the next two options.

If your little one has a fruit preference you can always mix and match fruits to suit them.

Puree

Ingredients

1 tablespoon of coconut oil

4 peaches, cut into smaller pieces

2 apples, peeled and diced

1 punnet of blueberries

1 punnet of strawberries

1 ripe banana, mashed or chopped into small pieces

100 ml water

Method

Melt the coconut oil in a saucepan.

Add apples and peaches.

Stir for 2 minutes.

Add water and simmer for 5 minutes or until fruits are soft and the water has evaporated.

Add blueberries and strawberries and stir for one minute.

Add banana then blend to the desired consistency.

This is delicious served on its own or with some greek yoghurt/coconut yoghurt.

Breakfast puree

Prepare 100g of quiona flakes as per packet instructions which will form a nutrient and protein dense porridge consistency.

Take three tablespoons of puree [modify this according to the consistency your little one would like] and mix together.

Now you have a filling, naturally sweetened breakfast. For those bubs who are a little fussy at dinner time, you can also use this for dessert to fill up your little one before bed.

Fruity Icy Poles

Fruity icy poles are a must have in summer and much better for you than the sugar filled, store bought ones.

Kmart has some cheap options for either zooper doper styles or icy pole style.

To make these you can either just fill with the puree, add some additional water if you feel they are too thick. For an extra special treat you can layer your icy poles with coconut yoghurt or other yoghurt.

For older kids, you can add some whole fruits too for even more fun!

Good luck and don’t forget to tag us in your creations – we love to see them!
