Recipe: Quick, No Bake Muesli Bars

No Bake Muesli Bars - Serves: Makes 12 small bars
1 cup rolled or quick oats
1 1/2 cups small seeds of your choice (we used pumpkin seeds, sunflower seeds and sesame seeds)
1 tablespoon chia seeds
1 cup desiccated coconut
1/3 cup cacao nibs
1 tablespoon Franjo’s Kitchen Motherhood Blend
125g non dairy butter
1/2 cup rice malt syrup
Method
Over a low temperature on the stove, melt the butter and rice malt syrup together.
Remove from the heat and allow to cool slightly whilst you prepare the other ingredients.
In a medium mixing bowl, combine the melted butter and rice malt syrup with the remaining ingredients and stir well with a fork to combine.
Pour into a standard sized loaf tin lined with parchment paper and use a potato masher to press the mixture down firmly.
Place in the freezer for at least 1 hour to firm up.
Remove from the freezer and cut into 12 small bars with a sharp knife. Place into an airtight container and keep in the fridge or freezer for up to 1 week.
