No Bake Muesli Bars -Â Serves: Makes 12 small barsÂ
1 cup rolled or quick oats
1 1/2 cups small seeds of your choice (we used pumpkin seeds, sunflower seeds and sesame seeds)Â
1 tablespoon chia seeds
1 cup desiccated coconut
1/3 cup cacao nibsÂ
1 tablespoon Franjo’s Kitchen Motherhood BlendÂ
125g non dairy butterÂ
1/2 cup rice malt syrupÂ
MethodÂ
Over a low temperature on the stove, melt the butter and rice malt syrup together.Â
Remove from the heat and allow to cool slightly whilst you prepare the other ingredients.Â
In a medium mixing bowl, combine the melted butter and rice malt syrup with the remaining ingredients and stir well with a fork to combine.Â
Pour into a standard sized loaf tin lined with parchment paper and use a potato masher to press the mixture down firmly.Â
Place in the freezer for at least 1 hour to firm up.Â
Remove from the freezer and cut into 12 small bars with a sharp knife. Place into an airtight container and keep in the fridge or freezer for up to 1 week.Â
