Recipe: Truffles to Support Milk Supply
Lemon, Coconut & Maple Truffles
These truffles are loaded with good fats & fibre for your digestion, protein rich from the cashews & also contain the galactogue flaxseeds to support your milk supply!
All round winner and the kids love them as well. PLUS they will satisfy you and keep you fuller for longer!
Ingredients
1/3 cup of flax almond meal
1 cup of cashews, ground
2 cups unsweetened desiccated coconut (+ 1/2 cup for coating)
1/3 cup extra virgin coconut oil
1/4 cup organic maple syrup
zest and juice of one lemon
1 tsp pure vanilla extract
a pinch of sea salt
Method
Place the cashews in a food processor & blend until smooth.
Add all of the remaining ingredients & blend for 1-2 minutes, or until the mixture starts to mix together like a dough.
Form small balls with your hands & roll them in the remaining coconut.
Place in the fridge for at least half an hour to set.
*Best kept in the fridge.
